Heat oil in frying pan. Pour about 1 cup of Art’s Enchilada Sauce in a bowl. When oil is hot enough, dip corn tortilla into oil just long enough for tortilla to be flexible. Then dip tortilla into enchilada sauce to cover both sides. Transfer to plate. Fill with cheese and onion down the middle of the tortilla. Fold left side over top of cheese and onion then fold right side over. Place enchiladas side by side in pan. Cover with Art’s Enchilada Sauce and sprinkle additional cheese on top. Place in oven and heat at 350 degrees approximately 10 to 12 minutes or until enchiladas are hot and cheese is melted.
